Distribution of Arabinoxylans and Their Relationship with Physiochemical and Rheological Properties in Wheat Flour Mill Streams as an Effective Way to Predict Flour Functionality

The aim of the study was to evaluate wheat flour fractions and relationships between rheological properties mill streams with arabinoxylans content predict functionality. tested variety IS Laudis an industrial milling station several roll sections employed reach 30 passages streams. Each stream fraction analyzed separately. Several physiochemical (moisture, ash content, falling number, wet gluten index, damaged starch content) were evaluated by means utilizing various test apparatus techniques. total non-starch polysaccharides arabinoxylans, as well soluble insoluble investigated. Results showed significant differences in terms physicochemical parameters properties, arabinoxylans. PCA analysis can be useful for millers who then select blend obtain a maximum amount specified characteristics. A better understanding origin function different role their process will allow development blends desired Flours from late reduction sizing (C R) sorting filter (V) high T-NSP T-AX levels, so final NSP may balanced application proper C6–C7 R5 flours.
